My body has been so wacky since giving birth, remember I told you I had been severely affected by anything with sodium? That meant no ketchup, spray butter, or diet pop. If you have questions about diet pop that's a whole other blog. Simply put, you could argue that the aspartame is bad for you, and I would have to agree. But, I refuse to give up everything I love to eat so incredibly healthy. An occasional pop a few times a week is fine. If you're going to argue that diet pop increases your waistline then I'd have to disagree. If you are eating the correct portion sizes you will lose weight. I lost 80 lbs. the first time on Jenny Craig and I had a diet pop everyday and I'm losing it steadily again. I'm 3 lbs. from my goal weight. The good news for me is that I think my body is finally becoming normal again. I've been having a few pops a week with no weight gain! So, I decided to try spray butter last night...we have so much zucchini and squash from our garden that I decided to do a casserole. I sliced up zucchini and squash long ways. I then sliced red onion and tomato. I sprayed both sides of the veggies with spray butter and sprinkled parmesan cheese and garlic powder on them. I cooked them in the oven at 375 for 45 minutes. It was simple but extremely low-fat. It was delicious. The whole family ate the veggies, including my son. Usually the sodium from the spray butter causes a weight gain immediately. But...no weight gain, actually a weight loss! I'm down to 127.0! I don't know what happened this week but it's been falling off quickly - this never happens to me!
