Many people have a misconception about vegetables.  Some vegetables are considered "starchy" such as edamame, peas, and corn.  If you are going to eat one of these veggies it has to be in substitute for your bread, potatoes, or rice for that meal.  For example, I was at a cookout last night and I wasn't sure what they would have to eat and if it would be healthy or not.  To ensure that I didn't ruin my diet (especially when I'm so close to my goal weight!) I brought a veggie burger.  Sometimes you just have to get creative to be full yet not gorge yourself on fatty choices.  I stayed clear of the pasta salad (Italian dressing is high fat) and the taco dip (which I happen to love but has cream cheese and regular cheese in it).  Instead, I opted for a veggie burger with half of a 100 calorie multi-grain thinly sliced bread piled high with lettuce, pickles, peppers, tomatoes, mustard, and ketchup.  The only reason I had half of the bread was because I knew I wanted the corn they had put on the grill.  I didn't add any butter to the corn and my starch ended up being the half slice of bread and corn.  Delicious!  The only problem was that I didn't have an added fat for dinner (ie. light dressing or margarine) so I came home at 9:30, made a quick salad with light dressing just to make sure I got in all my food groups for the day!  

Breakfast -

JC Cinnamon French Toast with 1/4 cup sugar-free syrup

Banana

1 cup coffee with tsp. fat-free creamer

Snack -

JC Anytime Bar

Lunch -

JC Pasta Ole

Fresh green beans

Snack -

3/4 cup grapes

Dinner -

JC Rising Crust Pizza

Salad (mixed greens, peppers, mushrooms, tomatoes) 2 tbsp. light ranch

Snack -

JC Triple Chocolate Cheesecake

Speaking with a doctor is lot more easier .
